Evmolpia is a Bulgarian grape variety, obtained by crossing the Merlot and Mavrud grape varieties. The grapes are harvested in mid-September. The juice is infused with the hard objects (skin, seed, stems) for 6 hours to obtain a stronger, more fragrant rosé. The wine is bottled unfiltered to preserve the colour and taste intensity. This wine is a part of our Bulgarian Series of wines that serve as ambassadors of our call for preservation of Bulgarian wine grape varieties. It pairs well with aged cheese, white and red meat dishes.
