The grapes are harvested in mid-September from our own vineyards near the town of Shumen. The wine ferments in stainless steel vessels of 300 l, with 15% of whole grapes, de-stemmed by hand. The wine matures for 12 months with the whole grapes and is then transferred to vessels, 30% of which are French oak and 70% stainless steel. There it matures for 12 more months, before being bottled. It pairs well with risotto, pasta, seafood and white meat.
