The grapes used for the wine are harvested frozen in early December. The idea behind this technology is to have the water in the grapes freeze, followed by a slow process of pressing, by which only concentrated “grapes juice” is released. Slow 4 months fermentaiton followed by 12 months of old barrels aging, and 6 months of bottle development.<\/span><\/p>\n
