Description
Tsarev Brod is the first Bulgarian winery to produce a white-grape Pét-nat (Pétillant Naturel) by applying the oldest method of obtaining a naturally sparkling wine. The grapes were harvested at 19° brix in mid-September from our own vineyards near the town of Shumen. Fermentation takes place in small vessels of 300 l. Maturation on the leeks lasts 4 months, followed by partial dégorgement, resulting in the wine being left with the fine lees. The wine pairs well with appetizers, cheeses and fruit.
