This varietal wine of Tsarev Brod winery consists of 60% Sauvignon Blanc, 20% Traminer and 20% Chardonnay. The grapes used for the wine are always harvested at the same time – following mid-September, from our own vineyards near the town of Shumen. Thus mixed, the varieties ferment at 14-16°C for 30 days. Maturation on the fine lees lasts for 5 months, then the wine is bottled in late March. It pairs well with seafood and fish.
