Description
The grapes used for the wine are harvested in mid-September from our own vineyards near the town of Shumen. The wine ferments at a temperature of 18°C in vessels in the following ratio: 10% in new French oak, 20% in old French oak and 70% in small stainless steel vessels. Then it matures on the lees for 12 months. It pairs well with white meat and aged cheese.
